This is for the first ham. If you are having a whole hog processed, see below for second ham. Steak thickness standard is 5/8” thick one per package.

Bacon and sidepork are packaged in about 1 lb packages. Smoking and slicing bacon is $.85/lb extra.
If you chose no, they will be made into roasts. Steaks are packaged two per package.
Normal serving size with roasts is approximately half a pound per person.

All combinations will come with sirloin steaks.
Two packages of \"2 steaks per pack\" can be opened to equal four steaks. We recommend smaller packages, such as 2 or 3 per pack to reduce overall package size.

Some roasts will have bone and fat content. We can select only the choice roasts for you and grind the rest into ground beef if you like. Here is an average amount of choice roasts you would typically get back from a half of a cow: 4 to 5 Chuck Blade Roasts, 2 to 3 Chuck Arm Roasts, 2 to 3 Chuck English Roasts, 2 Sirloin Top Roasts, 1 Rump Roast
Round Steaks are cut at 1/2\" thick and packaged 1/2 steak per pack. Note: Extra $2.50/lb charge for cube steaks.
Cube steaks weigh an average of .5 lbs each and are typically packaged \"4\" per pack.
Beef short ribs have very little meat on them and are normally \"de-boned.\"
Boiling beef is bones that have a small amount of on them that can be used in soups and stews for flavor.
